Ingredients
4 Shallots
500g Turkey Leftovers
2 tsp Curry Powder
2 Tbsp Mayonnaise
1 Tbsp Mango Chutney
100g Sultanas/Apricots
1 tsp Salt
1 tsp Pepper
Handful fresh coriander
Method
Put the shallots on medium heat and sweat in butter
Add in your garam/curry powder and cook for a further 5 minutes
Take off the heat and add all other ingredients except the coriander
Use the coriander to garnish when serve
This dish is great when served in sandwiches, wraps, and jacket potatoes, or served alongside a salad.
