Ingredients
- 250g plain flour
- 175g salted butter softened
- 80g caster sugar
- 1 egg beaten
- 1tsp ground cinnamon
- 1kg Bramley apple
- 50g caster sugar
- 70g sultanas~
- 3tsp ground cinnamon
Method
Pre-heat oven to 170c
Add flour, sugar, cinnamon and butter to bowl and rub together to form breadcrumbs. Gradually add the egg into mixture until combined then wrap in cling film and allow to chill for 30minutes
Peel and core apples, put into bowl with sugar, cinnamon and sultanas and allow to macerate
Roll out ¾ of the dough and place in greased round (24cm) spring form tin
Add apple and sultana mix then with remaining dough roll out to cover the top and seal with egg wash *you can lattice for a different effect
Egg wash the top and bake for 50-60minutes until dough golden brown
Allow to cool before cutting, dust with icing sugar and serve with custard or whipped double cream
