Free Range Coronation Chicken

Serves 8 people

Ingredients

  • 8 chicken breasts
  • 1 tbsp vegetable oil
  • 1 small onion, skinned and finely chopped
  • 1 level tbsp curry paste
  • 1 level tbsp tomato puree
  • 100ml red wine
  • 1 bay leaf
  • 2 tbsp caster sugar
  • Juice of half a lemon
  • 8 tsp diced dried apricots
  • 3ooml mayonnaise

Garnish

  • Handful of coriander
  • 1 spring onion
  • Flaked almonds

Method

A classic coronation chicken recipe – perfect for picnics, sandwiches and jacket potatoes.

Place the whole chicken breasts in simmering water and poach for 30 minutes.

In a small saucepan heat the oil, add the onion and cook for about 3 minutes, until softened.  Add the curry paste, tomato puree, wine, bay leaf, lemon juice and sugar and simmer, uncovered, for about 10 minutes until well-reduced.  Strain and leave to cool.

Add the apricots to the strained ingredients and once fully cooled, fold in the mayonnaise.

Fold in the chicken pieces and garnish with chopped spring onions, coriander and flaked almonds.  Enjoy!
