“My tip for potatoes would be to use red potatoes for roasting. Desiree, which we stock in the Farm Shop, are perfect as they crisp up much better than white potatoes.
Par boil for 12 mins, drain, then shake in pan to rough up edges. Whilst doing this, heat Blackwells Goose Fat in roasting tray until very hot (~12 mins) then add potatoes to tray and roast until golden for 35 minutes until golden at 180 degrees fan assisted/ Gas Mark 4 / 350 Fahrenheit.”
